Hello, April. I’ve missed you.
This is my favorite month of the year, after my birthday month of course. The month of April brings an instant smile to my face for so many reasons. Mainly because this month we get to celebrate Good Friday, Easter, my 3rd Wedding Anniversary, (dating anniversary) and my anniversary board of internet girlfriends (A08’ers). Back up, yeah I said it. Internet girlfriends, it is today’s modern version of pen pals. Back in the wee-days of planning to getting married in 2007, I “met” a group of brides-to-be from the same wedding month as I. Coincidently, I didn’t necessarily “meet” them, but chatted with them in a chat/board room about bride and wedding stuff. (more along the lines of free-wedding therapy). Thank you to The Knot for hooking all of us together and to The Nest for keeping us together, too.
Fast-forward to 2011, I still chat with these awesome married ladies on a daily basis. I have met a couple of them “in real life.” We may have randomly met super-early in the morning because this A08 had a surprise flight to my part of town; or another A08 was on vacation and wanted to grab drinks and eat dinner so our husbands would see we weren’t crazy to meet people from the internet; we sometimes even hang out at their awesome Superbowl food-filled party; or better yet this A08 had an A08 sleepover, too. I have a wonderful group of internet girlfriends, and we are always there for each other whenever one is feeling up or down, facebooking each other random thoughts, celebrating wedding anniversaries on the same very day, or hosting a cookie exchange amongst the A08’ers. These sweet cookies will arrive for one of my fave NorCal A08’ers (Alicia). The creamy peanut butter combined with the chopped up bits of snickers bars will be a perfect sweet treat for her and just maybe she’ll share with her husband, too. Cookies + Internet Girlfriends = Best idea ever!
Peanut Butter Snickers CookiesAdapted from Two Peas and Their Pod
Ingredients: 1 ¼ cups all-purpose flour ¾ teaspoon baking soda ½ teaspoon baking powder ¼ teaspoon salt ½ cup unsalted butter, room temperature 1 cup creamy peanut butter ¾ cup granulated sugar ½ cup firmly packed light brown sugar 1 large egg 1 tablespoon milk 1 teaspoon vanilla extract 1 ½ cups chopped Snickers bars ¾ cup milk chocolate chips
Preheat the oven to 350 degrees. Line your cookies sheet with silpat baking mat or parchment paper. In the bowl of the stand mixer, cream the butter and peanut butter together until it is light and fluffy. Add the brown and granulated sugars and mix to combine. Add the egg, milk and vanilla extract and mix again. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Slowly add the flour mixture to the wet ingredients until fully incorporated. Fold in the chocolate chips and chopped up snickers bars. Using a small cookie scooper (1 heaping tablespoon), place 12 cookies on a prepared baking sheets. Using the back of a wooden spoon, gently press the cookie down. Bake for 10 to 11 minutes, or until the edges are slightly brown. Let cool on cookie sheets for 5 minutes before placing on cooling racks. Yield: 3 dozen cookies
Review: Simply scrumptious for anyone who loves the combination of peanut butter and chocolate. It’s a nice variation of a crispy chocolate chip cookie with little bits of your favorite candy bar, Snickers. You could probably substitute other candy bars; Twix, Mars, Reese’s Pieces, Almond Joy, Heath, and more. They all factor to more valid reasons to have another cookie exchange amongst girlfriends or internet girlfriends.
