Spinach Salad with Warm Bacon Dressing

I make this recipe whenever I have the crazy need for some bacon in my life because everybody knows that bacon makes everything better. Last year, I really wanted to celebrate International Bacon Day with the Royal Bacon Society. They had featured bacon popcorn, bacon vodka, chocolate covered bacon, and more…their motto is bacon is like meat candy! It’s hilarious knowing that there are people out there who love bacon so much, they devoted an entire day to it. (I’ll make sure to NOT miss this event this year.) However, this recipe does need much praise, it’s wonderful if you’re a bacon lover, it’s wonderful because its a Pioneer Woman recipe, it’s wonderful because there are some healthy spinach greens, and did I mention bacon? Try it, eat it, and enjoy your little bacon belly.

Spinach Salad with Warm Bacon Dressing

Adapted from Pioneer Woman

Ingredients3 whole Eggs7 slices Thick Cut, Peppered Bacon1 whole Red Onion, Small1 package Mushrooms, White Button8 ounces, weight Baby Spinach, Washed Dried And Stems Removed3 Tablespoons Red Wine Vinegar2 teaspoons Sugar½ teaspoons Dijon Mustard1 dash Salt

Preparation:

1. Cook eggs: cover with water, bring to a boil, then turn off heat and allow to sit in water for 20 minutes. Drain off water and add ice on top of eggs.

2. Fry bacon until crispy/chewy. Remove to a paper towel. Remove 3 tablespoons grease and set aside.

3. Add 2 add’l tablespoons of grease to a separate skillet over medium heat.

4.Slice red onions very thinly, then add to skillet. Cook slowly until onions are caramelized and reduced. Remove to a plate and set aside.

5. Slice mushrooms and add them to the same skillet. Cook slowly until caramelized and brown. Remove to a plate and set aside.

6. Chop bacon.

7. Peel and slice eggs.

8. Make hot bacon dressing: Add 3 tablespoons bacon grease, vinegar, sugar, and Dijon to a small saucepan or skillet over medium-low heat. Whisk mixture together and heat thoroughly.

9. Add spinach to a large bowl. Arrange onions, mushrooms, and bacon on top. Pour hot dressing over the top; toss to combine.

10. Arrange eggs over the top and serve.Enjoy!

Review: This is ridiculously insanely delicious. Don’t freak out using the bacon grease, but I did use a little bit of Olive Oil to lessen the calorie content. This is a meal in itself and pairs perfectly with a Zinfandel and a couple slices of freshly baked bread. That’s one happy meal for me!
