With the wonderful and delightful hotter days coming around again, there’s nothing refreshing as a large glass of lemonade. This past weekend, I did some hard duty pruning and removed several lemons from my Meyer lemon tree. Spring has sprung forward and I would hate to see the beautiful citruses go to waste. Naturally when you pick lemons from my tree, you make lemonade! This is a wonderful twist on a traditional lemonade sweetened with beautiful strawberries.
However, I wanted to change it up and make a copycat recipe from one of our favorite burger joints, Red Robin. They serve a fantastic freckled lemonade and it always quenches my sweet thirst for lemonade and strawberries. Simple and delicious drinks make me absolutely happy, and it’s a beautiful drink to sip away, too. This refreshment would be perfect on hot summer days, brunch with family, or a fun cocktail with a little extra liquor. Of course, you can make a variation on this recipe using different kinds of fruit. Mixed berries (blackberries, blueberries and raspberries), or even blueberry lemonade would make for some delicious concoctions, too.
Mmmmm, make a large pitcher for yourself a.s.a.p.!

Printable RecipeIngredients:2 cups lemon juice, about 10 to 12 lemons juice from 2 limes1 bag of frozen strawberries (or fresh – about 1 quart)2 cups sugar, plus 2 tablespoons 8 cups cold water
1 cup simple syrup (Equal mix of sugar and water)
Prepare the simple syrup. In a small saucepan, add the 2 cups of sugar and 2 cups of water. Heat over medium-low heat until the sugar is fully dissolved.
In a medium bowl, add the frozen strawberries and 2 tablespoons of sugar. Muddle the strawberries with the back of a wooden spoon (or muddler) until slightly mushy.
Add the lemon and lime juice in the pitcher. Add 6 cups of water and the simple syrup. Add the muddled strawberries and stir well.
Serve over ice and extra strawberries for garnishment.
Yield: 1 gallon, about 12 servings

Review: Quite refreshing, and even better than the original Freckled Lemonade. It’s a perfect amount of tartness and sweetness from the frozen strawberries and lemonade.
